S&C Drinks

Sweet & Chilli

We have been educating bartenders globally for over 20 years and the local team here in Australia is fully equipped with some of the country’s best spirits experts.

Nick Veale

Nick Veale, your educator, has been working in hospitality since 2006 in a career that has taken him from his home in the UK, around Europe, Thailand, before settling in Australia 9 years ago. After a stint in nightclubs in Turkey and Pubs and events in London, he was trained in London's vibrant cocktail scene in 2008. He went on to manage two successful cocktail bars for the Adventure Bar group before the allure of travel led him to join European Bartender School as an instructor in 2012. With over 6 years of experience with them and training more than 2000 bartenders, he found a passion for training and teaching.

He joined Sweet&Chilli as Training Manager in 2021, working as Training Manager for Diageo Bar Academy nationally in Australia and is now the nominated Educator for WSET for Sweet&Chilli.

  • Can I do Level 2 if I haven’t done Level 1?

    No prior knowledge is required; however, we do recommend that beginners start at Level 1. An understanding of principal international spirits and their production processes will be a big help when undergoing this course.

  • How many students generally attend a face-to-face classroom course?

    We prefer to cap the classroom attendance at approx. 30 students, whether that’s online or face-to-face. This gives our teachers a group size that is manageable and provides every student a fair and even amount of attention.

  • What happens if a student misses a portion of the course due to illness?

    We will always assess every student’s situation on a case-by-case basis. If it is just the exam that needs to be sat, this can be done at an arranged, later date.

  • I have personal circumstances that might need additional time for the examination, is this possible?

    Yes! but please let us know in advance. Please contact us to organise your requirements when booking your course. Any reasonable adjustments will have no bearing on your final grade. Examples of reasonable adjustments may be:

    • Changing standard assessment arrangements, for example allowing candidates extra time to complete the exam activity;
    • Adapting exam materials, such as providing materials in large text format;
    • Providing access facilitators during the exam, such as a sign language interpreter or reader;
    • Re-organising the exam room, such as the removal of visual stimuli for an autistic candidate.
